Ingredients:
150g poppy seed ground zest of 1 lemon
150g melted butter 1 spoon vanilla sugar
1 cup of sugar pinch of salt
4 separated eggs 2 spoons raisins
4 spoon Gluten Free self raising flour 30g chopped nuts
5 spoon milk
Method:
1. Bowl one -mix the flour with the ground poppy seed.
2. Bowl 2 -Whisk the egg white with ½ cup of sugar until it’s fluffy.
3. Bowl 3 – Mix butter, ½ cup of sugar, egg yolk, lemon zest and vanilla sugar.
4. Add the flour with the poppy seed and the milk to the yolk mixture and stir well.
5. Add raisins and chopped nuts.
6. Gently fold in the egg whites.
7. Put in a 24” round cake tin.
8. Bake in pre-heated oven to 180c for 40-45 minutes.
