Ingredients
1 cup Gluten free flour
1 spoon active yeast
4 spoons of sugar
1 egg (room temperature)
1 teaspoon Xanthum Gum
3 spoons warm milk (can use more water)
1 spoon oil
1/2 cup warm water
Method
1. Put the flour in a large bowl
2. Make a little hole in the middle and put the yeast and 1 spoon on sugar in, cover with
the flour.
3. Add to the side of the bowl the rest of the ingredients apart from the warm water.
4. Start to add the water, a little at the time while mixing (and use a mixer) until the
dough is very soft and sticky.
* Tip 1 - to reduce the absorption of oil, add 1 spoon of brandy to the mixture.
5. Cover the bowl with clean towel, and set in a warm place for 1 1/2 hours.
* Tip 2 - you can warm your oven for 50c, turn it off and put the cover bowl in it.
* Tip 3 - Put a warm bag in the microwave for 2 and a half minutes, take it out of the
microwave and put the cover bowl on top of it.
6. Heat 3cm deep of oil in a saucepan. knead the dough and add 1/4 cup of water to
make it soft and sticky.
7. Damp your hand, take a piece of dough in a size of small ball and put it in the oil. turn
it over until golden brown.
8. Dust the doughnuts with icing sugar. inject jam in.
