
Fancy a quick nosh? looking for party nibbes? this mini Pizza is for you.
Ingredients:
1 pack Gluten Free Pizza base mix (I use Isabela's)
4 spoons Tomato puree
2 spoons Pesto (I use basil flavour)
1 cup grated cheese (Mozzarella/Cheddar)
Optional - olives, anchovies, mushrooms - cut to fine pieces
Flour for dusting work surface
Method:
1. Make the dough as per the instruction on the pack.
2. Mix the tomato puree with the pesto.
3. Take 1/2 of the dough and roll as rectangle on a well floured surface.
4. Spread half of the tomato puree all over the dough.
5. Sprinkle half of the cheese over and add your topping.
6. Roll the dough over to making a long sausage shape.
7. Cut the sausage to pieces about 1 Cm high.
8. Pre- heat the oven to 180c.
9. Put a baking paper on a flat tray, put the mini pizza on the paper with the topping
facing up (leave some gaps as the mini pizza will raise).
10. Bake for about 20 minutes until golden brown.
