Gluten Free Deliciousness


For any occasions,  especially when you want to impress...


Ingredients:

2 big Squash peeled and cut to chunks

2 medium onion roughly chopped
2 cubes of chicken stock ( I use Kallo)    
1 spoon vegetable oil
4 cups of boiling water
2-3 spoons double cream
Salt and freshly grounded black pepper



Method:

1. Heat the oil in a big saucepan, add the onion and cook for 2 minutes.
2. Add the squash and stir.
3. Dissolve the chicken stock cubes in the boiling water.
4. Add the water to the saucepan and stir well,
5. Half cover the saucepan with it's lid, and let it cook for 20 minutes until the
    squash is soft.
6. Mash the soup with a blender (or transfer the soup to a food processor, mash
    until smooth and return to the saucepan)
.
7. Add salt and black pepper to your taste.
8. Before serving, re-heat the soup, add the double cream, stir well and serve.
