Gluten Free Deliciousness

Ingredients:

2 carrots
2 courgette
1 spring onion
1 egg
1/2 cup breadcrumbs for covering the cakes
salt and pepper



Method:

1. Grate the courgette and place in a colander for 1/2 hour.
2. Chop the spring onion, place in a large bowl.
3. Grate the carrots, squeeze well and place in the bowl.
4. add the egg, breadcrumbs and salt and pepper and mix well.
5. Squeeze the courgette and add to the bowl, mix well.
6. Pre-heat the oven to 180c, put some baking paper on a baking try.
7. In a small bowl, put 1/2 cup of breadcrumbs.
8. Make the mixture into small balls (ping pong ball size), cover in breadcrumbs and put on the tray.
9. Squeeze the balls a little bit to make them a little flat.
10. Bake the Veg cakes until golden brown, about 20-30 minutes.
